Caseificio Palazzo Dairy is a family owned
company with over 50 years of experience
in the craft of typical Apulian cheese.
Caseificio Palazzo Dairy is located in
Putignano, a small town in the hearth of
Apulia, a region of Southern Italy (the heel
of the boot). The central zone of Apulia is
called Murgia area: with an economy based
on agriculture and farming. The Murgia area
is the land of βlivingβ rock and trulli,
ancient dry masonry conic stone buildings.
So our cheeses are branded MURGELLA in
order to highlight that they are produced
with raw ingredients coming from the
Murgia Area and according to the
traditional manufacturing process. We
produce Typical fresh and matured Apulian
cheeses made from cowβs milk: mozzarella,
burrata (fresh kneaded-paste cheese
stuffed with cream and shredded
mozzarella), plain and smoked scamorza in
different shapes (pear, round, flat, little
pig), Caciocavallo Silano DOP (matured
cheese), cacioricotta (medium hard cheese).
